chickweed day

I spent a big part of yesterday in the spinach greenhouses pulling out huge amounts of chickweed. It looked like it was taking over the spinach in some areas, and we needed to get rid of it before it went to seed.



I later found out that I could have been eating this. Apparently, chickweed tastes a bit like spinach. We should have just left it growing with the spinach! You can eat it with a salad, use it dry, or make tea with it. According to a website I was looking at, this plant is a miracle worker. It's good for circulation, coughs, constipation, colds, etc...and it's full of vitamins and minerals.

So maybe one day, I'll have a farm that just grows weeds!
